One of the easiest and most effortless dishes to prepare, this is a staple for dinner in most North Indian households, whether it is a special occasion or just a regular night. The name of the recipe literally translates to ‘chicken that will leave you speechless’, made with twice the amount of onions. Without further ado, let us dive into the details of this recipe.

This north Indian delicacy is an example of a chicken dish that may be prepared using only the most basic kitchen supplies. It doesn't necessitate any specific materials or equipment. This meal has a wonderful, creamy gravy and is full of aromatic flavours. This recipe is simple and quick to prepare, taking only approximately an hour. Read on for the recipe.

MAIN INGREDIENTS:

  • 6 tablespoon sesame oil

  • Chicken

  • Onions

  • Tomatoes

  • Garlic paste

  • Ginger paste

  • Red chili powder

  • Ghee

  • Garlic and ginger paste

  • Yogurt

  • Turmeric powder

  • Coriander powder

  • Cumin powder

  • Green cardamom powder

  • Mace powder

  • Clove powder

  • Cinnamon powder

  • Black cardamom powder

  • Cream

  • Coriander leaves

  • Mint leaves

  • Kasoori methi

  • Green chillies, chopped

  • Salt to taste

 

Step 1

For this recipe, we will be making the garam masala. Freshly ground masala is always better than packed, store bought ones that will lose its flavor after a while. This masala is extremely simple to prepare. Mix together 1 tbsp green cardamom powder, 1 tbsp mace powder, 1 tbsp clove powder,1 tbsp cinnamon powder and ¼ tsp black cardamom powder. Your masala for the recipe is ready.

Step 2

Next, we will move on to marinating the chicken. First, cut the chicken into a nice curry cut. In a bowl, take 2 tsp ginger paste,1 tsp garlic paste, 1 tbsp red chili powder and salt as per needed. Toss in the chicken, combine it well and keep aside for marination. It is best if you can marinate for at least 20 minutes.

Step 3

To make the masala base for this delicious chicken dish, chop 1 onion finely and another one roughly into bigger chunks. Blend 2 tomatoes for puree.

Step 4

In a pan, heat some ghee. Add 2 ½ tsp pf ginger garlic paste and fry until aromatic. Into the pan, toss in the finely chopped onions. Fry the onions until they become golden brown. Add the tomato puree into the pan at this point and cook the mixture until the raw smell goes away.

Step 5

In a separate bowl, take 1 small cup of yoghurt. Add some turmeric powder and red chili powder into the yoghurt and mix well. Add this yoghurt mixture into the pan along with the tomato puree and cook for a while.

Step 6

Add 1 tbsp coriander powder and 1 tbsp cumin powder into the pan and combine well.

Step 7

Slide in the well marinated chicken into the pan, along with the second batch of onions that we roughly cut and kept aside. Add some hot water, and the garam masala that we made in the beginning. Keep on flame until the chicken is well cooked. This shouuld take about 20-25 minutes.

Step 8

Finally, for the garnishing. In a small pan, heat 3 tbsp cream, 1 tbsp coriander leaves,1 tbsp mint leaves, 2 chopped green chillis and 1 tbsp kasoori methi. Top the chicken off with this delicious garnish.

Step 9

The powder can now be added to the pan. Let it simmer for a minute and then remove it off the heat and serve with rice.
